Speedy Spicy Caramelised Red Onion and Chilli Chutney

Caramelised Onions

Following on from the Caramelised Onion Chutney that I recently made, I decided to give it another go but this time using red onions.  The first batch was absolutely fine but after leaving it for a few {weeks} days to mellow I felt that there was something missing so I intended to spice this lot up a bit. So, without any further ado, here is my Speedy Spicy Caramelised Red Onion and Chilli Chutney.

Ingredients:

  • 4 tbps olive oil
  • 1400g red onions, peeled and sliced thinly or chopped in a food processor  {the speedy part of the recipe!}
  • 300g dark muscovado sugar
  • 2 roasted red peppers, cut into small pieces or chopped in a food processor
  • 300g golden delicious apples, peeled and cored and cut into small pieces
  • 150ml Rioja red wine vinegar
  • 50ml balsamic vinegar
  • 1 tsp chilli flakes
  • 1 tsp ground ginger
  • 2 tsps dried oregano
  • 1 tsp sea salt

Method:

  • On a low heat, melt the butter in a maslin or heavy based pan
  • Add the onions and sweat until translucent
  • Add 3 dessert spoons of the sugar and cook on high until the onions have caramelised
  • Add the roast peppers and apples continue to cook for a further 3 minutes
  • Added the remaining ingredients and simmer for 30 minutes until the mix has thickened nicely but is not dry
  • Spoon into sterilised jars, seal and leave to mature for at least a month {although I doubt that I will!}.

I highly recommend using a food processor for this recipe as the sting of the onions is just too much to bear.  I remember the scene in “Julie & Julia” when Julia Child is learning to chop onions and her poor husband only makes it to the door before he is blinded by the sulphur emitted by the onions so unless you want to encounter such a similar fate, please, please use your machinery!!! You will end up with a finer mix but that’s all the better for spreading on your favourite chutney accompaniment…
