A Robust Red Pepper Soup

I remember fondly first having this soup on a lovely summer’s day as we bade bon voyage to one of my cousins as she embarked on a two year trip to the Far East, lucky her! Carol-Ann, another lovely cousin, made this gloriously vivid soup from a recipe from the Avoca Cafe cookbook. I of course had to buy a copy of the book for myself!

I’ve made this soup numerous times now and have adapted it to suit our tastes. Hubbie is a tomato soup freak and he loves the tomato-pepper combination. The addition of cinnamon gives the soup a real earthy kick and it would be rather bland without it. Bravo Avoca!
